Culinary Dictionary: Letter D

Exciting is letter D with all its fancy schmancy words. My favorite is dukka which I think I will be making really soon!


Demi-glace:
also called demi-glaze is brown sauce made of half Espagnole sauce and half veal stock.

Dacquoise:
dessert made with layered discs of meringue with cream filling.

Dauphine Potatoes:
fried mashed potato croquettes.

Dukka:
Egyptian spice blend made of ground toasted spices, nuts and seeds (generally chickpeas or hazelnuts, pumpkin seeds, sesame seeds and cumin). It is used to season meats or mixed with olive oil as a dip for breads.

Dundee Cake:
Scottish fruit cake.

Du Barry:
crème Du Barry is a cauliflower soup named after la comtesse Du Barry, a mistress of Louis XV.

Dubonnet:
an aperitif consisting of red or white wine flavored with herbs, spices and quinine.

Letters A, B, C, D, E , F, G, H , I , J, K, L , M, N, O, P, Q, R, S, T, U, V, W, X, Y and Z.

    We could make a lovely meal from the D's. One of my favorites is cauliflower soup or creme Du Barry. So fancy.

    How could I have missed demitasse and duxelles-especially that i'm a coffee fan and a huge mushroom lover.
    Here it is, Barbara, so we can have a complete and happy meal:)
    Demitasse: a very small cup of strong black coffee.
    Duxelles: Minced mushrooms, shallots and herbs sautéed in butter.
