Baked Calamari Rings


This baked calamari is truly delicious. I first tasted this preparation at my mother-in-law’s two Christmases ago and fell in love with it. She verbally gave me the ingredients so I replicated the recipe from memory, while adding my two cents. The calamari is really tender and fragrant. The mixture of shallots, white wine and extra virgin olive oil yields an earth-shattering sauce. So I strongly suggest having it with some bread so you can dip it into the sauce and not let a single drop of it go to waste. If you have leftovers, reheat them or enjoy them cold for a ceviche-like experience.

Baked Calamari Recipe

4 servings

1 pound calamari, cut into rings
2 shallots, finely grated
2 garlic cloves, pressed
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons dry white wine
Sea salt and freshly ground pepper
1 tablespoon chopped parsley

Preheat the oven to 400 degrees Fahrenheit.

Place all of the ingredients in a large mixing bowl and toss to combine. Transfer to a rimmed baking pan. Bake in the oven until the calamari is cooked and the sauce slightly reduced, 20 to 25 minutes.

Serve with bread.

    lovely and fresh. i do love my fried calamari (i'm from RI and it's big there) but this is a nice departure. very pretty presentation as well!

    I love calmari – but living in the prairies – we only get it frozen – and then, to get a GOOD variety – good enough to remain tender when cooked, is very very difficult. Sometimes I succeed. It takes only seconds to cook… so, I can imagine how delicious this is, but would almost need to live somewhere else to be able to make it. But, that is OK. I can enjoy it when I travel.

    I made these for lunch today Nisrine, they are really nice! I just added a bit of chili to your mix of flavors. It is a very easy recipe, but tasty, and everybody loved it. Thanks so much for sharing!
