Date Ice Cream

I just realized this is my forth date recipe in two weeks. Talk about a sweet kind of addiction.

There are only two ingredients in this ice cream. Well, three if you count the salt. Pure date syrup is the main ingredient. It acts as a sugar-free sweetener as well as a flavoring and coloring agent. The other ingredient is coconut milk which gives a delicious undercurrent of coconut flavor that’s fantastic with date.

This is an easy, no-fuss, uber lush ice cream that’s a must-make if you like dates.

The pastry shown with this ice cream is makrout.

Date Ice Cream Recipe

4 to 6 servings
1 (14-ounce) can full fat, unsweetened coconut milk—I used this one.
½ cup date syrup (how to make date syrup)
¼ teaspoon sea salt

Whisk the ingredients together in a large bowl. Transfer the mixture to an ice cream machine and churn according to manufacturer’s instructions. Freeze in a lidded container until set.

Devour!

You have won me over consistently with your novel ice creams. I have never heard of date syrup – but what a great use of dates to have their natural sweeteners in an icecream – and with coconut milk, nontheless. WILD.
    Love it.

I just finished up chopping dates for a dish I'm preparing for company on Friday. Couldn't help but sneak a few, they are like candy! Bet they make a wonderful ice cream.
