Fish Roulade with Garlicky Almond Stuffing
My preferred protein during the summer is indubitably seafood. That’s when I consume it the most. It could be due to the fact that I’ve always vacationed near the coast where it’s hard to go for anything else when fish is so fresh and plentiful. Because of that, I guess, as soon as summer begins I start craving fish and seafood of all sorts, especially if I’m anywhere with fresh marine air around.
This recipe is a typical Moroccan fish preparation, albeit in a different format. The garlicky almond stuffing is usually used inside a large whole fish. I opted for fish fillets but both ways are delicious.
Fish Roulade with Garlicky Almond Stuffing
4 servings
1 cup blanched and peeled almonds*
1 medium garlic clove, peeled
10 sprigs parsley
1/8 teaspoon ground nutmeg
Sea salt and ground pepper
4 thin fish fillets (sole, flounder or cod)
1 cup vegetable broth
1 medium tomato, sliced (optional)
1 small onion, sliced (optional)
Preheat the oven to 350 degrees Fahrenheit.
In a food processor, grind the almonds,garlic, parsley, nutmeg, salt and pepper.
Season the fish fillets with salt and pepper. Place about 2 tablespoons of the mixture on each fillet and roll it into a loin. Sprinkle remaining mixture on top of the loins. Place the loins in a rimmed baking pan. Place the tomato and onion slices alongside the loins and add vegetable broth.
Bake for 30 minutes, or until the fish is cooked and flaky.

Fish is my preferred protein, any time of year! I really like how you assembled this with filets instead of the whole fish, as it makes it feel a lot more do-able for a simple meal. I look forward to trying this!

Oh, this sounds simple and lovely. I like to eat fish in the summertime, too, and I'm always looking for new ways to prepare it. The filling sounds like a great twist on the pesto I usually fall back on!

What a wonderful dish! I too eat seafood during the summer as usually I am more of a vegetarian with seafood on occasion. As I live on the coast it seems that fresh fish is so much more obviously abundant, plus it gives me something to grill :)
