Moroccan Burgers


Moroccans make their hamburgers smaller and eat them without a bun . They serve them with crusty bread and a host of salads, dips and sides–mezze style, if you would. They take a bite of the burger followed by a few pieces of bread dipped in the various accompaniments. It’s a very tasty way to enjoy a burger though I must say that I love having it American-style as well.


Moroccan Hamburger Recipe

4 servings

1 pound ground beef
1 garlic clove, minced
1 shallot, minced or grated
2 tablespoons chopped cilantro or parsley (or both)
Sea salt and ground pepper, to taste (1/2 tsp of each)
1/2 teaspoon ground coriander
1/4 teaspoon cumin
1/2 teaspoon cinnamon

In a medium bowl, combine the beef with the garlic, shallot,cilantro or parsley, salt, pepper, coriander, cumin and cinnamon.. Mix gently with your hands to blend.

Divide the meat into four equal parts and shape into patties. Grill for 4 to 5 minutes per side. Serve with fresh bread and a variety of sides such as zaalouk, tchoutchouka, markat hzina and hummus.

    Our burger mixture is different but we eat them in the same manner. I'm diggin the spices in yours.

    I must have a bit of Moroccan flair in me because I almost never serve my burgers with a bun and we typically serve them a bit smaller with lots of fresh veggie sides. I love the fabulous mix of spices in these!

    Wow – I love that idea! I am a big fan of cumin and cilantro. How wold it taste without the cinnamon? I'm allergic. Sometimes there is that one spice that either makes or breaks a dish….

    I love the burgers with spices in them, not just plain meat! I am trying to hold off the carb but the bread looks delicious. Have a recipe for that one as well?
