Iced Coconut Mocha Latte

The inspiration for this drink came from a local coffee shop that featured coconut latte all summer long. Every time I’d stop there for coffee, I’d be tempted to the limit but resist, reminding myself that I don’t do one-thousand-calorie drinks with funky sugar syrups anymore. Getting really close to succumbing, it was vital (Yes, vital! Latte is serious business.) that I make my own, on my own terms in the wellness of my refined sugar-free kitchen.

I’ll never know how my latte compares to the one from the coffee shop but I think it came out pretty good. How bad can anything with chocolate, coconut and coffee be!

Coconut Mocha Latte Recipe

1 serving

3/4 cup thick coconut milk
1/4 cup brewed coffee
1 teaspoon unsweetened cocoa powder, preferably Dutch processed
2 tablespoons honey or agave syrup
1/4 teaspoon coconut extract (optional)

For serving
Ice cubes
Whip cream and toasted shredded coconut (optional)

Blend the coconut milk, coffee, cocoa powder, honey and coconut extract until well combined.

Serve over ice, topped with whip cream and toasted coconut.

perfect. I also love those frapuccinos and blended beverages sold at coffee shops but just can“t accept the fact of ingest all those bad, bad calories, saturated trans fats and refined sugar. I also try to make healthier choices at home. I will definitely give a try to your iced coconut mocha latte, which sounds delicious.
