Carrot Cake Smoothie


Every now and then I feel like drinking my desserts instead of eating them. There is something guilt-free and totally satisfying about skipping eggs, butter and flour yet still enjoying all the flavors associated with our favorite desserts.


I have made pumpkin smoothie before when craving pumpkin pie, and mocha latte when needing an urgent chocolate fix. I’m repeating the experience today with one of my all-time favorite desserts: carrot cake.


Carrots (of course!), walnuts, pineapple, dates, spices and a hint of vanilla were blended with almond milk for a deliciously wholesome dessert.

Carrot Cake Smoothie Recipe

1 large serving

2 carrots, peeled and sliced
3 large dates, pitted
A small handful of walnuts
1/4 cup fresh or canned chopped pineapple
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
A pinch of ground nutmeg
1 cup almond (or cow) milk
4 ice cubes

For serving (optional)
Nonfat whipped cream
Ground walnuts

Bring a small pot of water to a boil over high heat. Blanch the sliced carrots, dates and walnuts, 4 minutes.

Drain the carrots, dates and walnuts. Transfer them to a blender. Add the pineapple, vanilla, cinnamon, nutmeg, milk and ice. Blend until completely smooth.

Pour into a glass. Top with whip cream, if you wish.

    Carrot cake is my absolute favorite cake but I would have never thought of making it into a smoothie. What a great and delicious idea. Can't wait to give it a try.
