Baked Zucchini

This is one of our favorite ways to eat zucchini as well as one of our favorite side dishes. It is really simple to make and highlights what a wonderful vegetable zucchini is. As you know, zucchini is quite bland and needs to be seasoned well but it is one of the quickest, most versatile vegetables to cook. The garlic, zesty salsa and cheese in this recipe give zucchini much flavor.

I always make extra because I absolutely love zucchini sandwiches for lunch. I can eat them many days in a row with extra cheese.

BAKED ZUCCHINI RECIPE

Yield: 4 SERVINGS

Prep Time: 5 MIN

Cook Time: 17 MIN

Ingredients:

2 zucchini, thinly sliced
1 garlic clove, pressed
½ cup picante salsa
¼ cup water
2 tablespoons olive oil
Sea salt and ground black pepper, to taste

1/2 cup shredded parmesan

Directions:

Preheat the oven to 350 degrees Fahrenheit.

Arrange the zucchini slices in a single layer in a large shallow pan.

Stir the rest of the ingredients except the cheese in a small bowl. Spoon the sauce evenly onto the zucchini.

Bake 15 minutes or until the zucchini is wilted and sticky from the dried up sauce. Sprinkle with shredded cheese. Allow it to melt, a few minutes. Take out of the oven and serve warm.

    Simple and delicious, I so enjoy Parmesan on zucchini it is that extra touch that always pays off. Great recipe!

    Yes, yes i like extra cheese too, and definitely this zucchini recipe will be included in every meal at home, and because my mom is just a housewife she will make them every time I’ll ask for, and specially because they require little time to make them. After this Baked Zucchini definitely goes nice cake which are describe in Keikos Cake review community.

    What a simple but flavorful recipe! I love zucchini and must try this. I’ve never thought to make a zucchini sandwich, but it’s a great idea!

    I just made this for supper and what a hit!! I didn’t have a clove of garlic and substituted garlic salt and I added feta cheese. Awesome taste and everyone loved it!! Thank you!!
