Cumin-Lime Stewed Red Lentils

 

It is no secret on this blog that I love red lentils. I love how fast they cook. I love how soft they get when cooked, almost like a mash but not quite. I could think of a dozen ways to make them yet I always tend to cook them up into a soup or stew. Here, they are seasoned with cumin, a hearty dose of lime juice and some red onion. A simply delicious, satisfying dinner.

CUMIN LIME RED LENTILS RECIPE

Yield: 4 servings

Prep Time: 5 min

Cook Time: 15 min

Ingredients:

1 ½ cups red lentils
4 cups vegetable broth
2 tablespoons olive oil
½ teaspoon salt
2 tablespoons grated red onion
1 ½ tablespoons lime juice
1 teaspoon ground cumin
Chopped cilantro leaves for garnish, optional

Directions:

Place the lentils, vegetable broth, olive oil and salt in a medium pot over medium heat. Cover with a lid and cook 15 to 18 minutes, until the broth is almost evaporated and the lentils soft.

Remove from the heat. Stir in the grated onion, lime juice and cumin.

Serve warm garnished with chopped cilantro leaves.

    Cannot wait to try this: have never used lime and, trying to taste the result as I am typing behind the computer, it should add a wonderful piquancy! Also adding the onion at the end . . . just can’t wait to have a bowl in front of me!
