Gluten-Free Blondies with Almond Butter and Chocolate Chips

Last week, we celebrated John’s birthday. When I asked him what kind of cake he wanted, he simply replied: “something on the healthier side.” I knew that meant something with less butter and sugar but wasn’t sure whether to make him one of his old favorites or create something new. I had been thinking of making blondies with nut butter and thought they would be to his taste.

John is even more health-conscious than I am and about three times more disciplined when it comes to eating (and everything else). He’s not as picky as I am but he is definitely better at portion control and resisting temptation. I admire him for that. No, I envy him for that. Okay, I admire and envy him at the same time.

These blondies are made with rice flour and have somewhat the texture of brownies, only they’re blonde and, well, more fun (!)… They are wonderful warm with a glass of milk for breakfast. You can make them with peanut butter for a more pronounced nut taste.

Cook Time: 30 MIN


¾ cup almond butter or natural peanut butter, at room temp

4 tablespoons unsalted butter, softened

½ cup honey

½ teaspoon vanilla extract

2 large eggs

1 cup minus 1 tablespoon white rice flour

1 tablespoon tapioca starch

1 teaspoon baking powder

¼ teaspoon salt

½ cup semisweet chocolate chips


Position the baking rack in the middle of the oven. Preheat the oven to 325 degrees Fahrenheit. Grease an 8-inch square pan and line it with parchment paper.

In a large bowl, whisk the almond butter, softened butter, honey, and vanilla until well incorporated. Add the eggs and whisk until you obtain a smooth and shiny batter.

Whisk the flour, tapioca starch, baking powder and salt in a separate bowl. Fold the flour mixture into the almond butter mixture. Fold in the chocolate chips.

Spoon the mixture into the prepared pan. Smooth the surface with a spatula. Bake for 30 minutes or until the blondie is set and the top is crunchy.

Let cool. Unmold and cut into squares.

    Sima, rice flour is distinct from rice starch. I hope you can easily find it where you live.

    How wonderful your husband is such a healthy eater! We could all take a lesson from him. I get tempted so often.

    These look phenomenal! Can I use something to substitute out the nut butter for something else? I don’t want to alter the texture.
