Broccoli Pancakes

Good morning all! I just finished cooking these pancakes and came rushing to post them. I couldn’t wait to share them with you. My kitchen is still messy and I have to go back to bake chocolate chip cookies and clean up. I have a picnic planned for Maya and her girlfriends and am trying to get everything ready this morning.

I’ll keep this post short. Enjoy the recipe. It’s tasty and great for brunch or picnic. I hope you make it soon.

For the pancakes

1 cup steamed broccoli florets

1 cup milk

1 cup whole wheat flour

1/3 cup grated Parmesan

1 teaspoon harissa or other hot sauce

½ teaspoon baking powder

2 large eggs

1 teaspoon salt

½ teaspoon ground black pepper

Oil for the pan

For the sauce

¼ cup olive oil

1 tablespoon mirin or white vinegar

2 tablespoons peanut butter

1 tablespoon honey

1 teaspoon harissa or other hot sauce


Place all the ingredients for the pancakes in a blender and process until you obtain a smooth green batter.

Spray a non-stick pan with cooking spray or brush it with oil. Heat the pan over medium heat.

Pour a 5-inch round of batter onto the heated pan. Cook the pancake for 2 to 3 minutes per side, using a spatula to turn it over. Repeat with the rest of the batter.

To make the sauce, whisk all the ingredients for the sauce in a small bowl.

Serve the pancakes warm or at room temperature accompanied with the sauce. Top with cheese or cured meat, if you wish.

    Fantastic! Will be tried by the weekend! Living in multicultural Australia I would really love to share this at a near-future date, because so many of the ingredients are so what we use at the moment, but may not always put together in as exact ways!
