Chilled Cranberry Spice Soup

Chilled Cranberry Spice Soup

Ah the short days with early darkness. They need a color lift.

A splash of pink in the middle of the winter.

A fresh and bright cranberry yogurt soup with a hint of spice to keep with the holiday spirit. Just what a winter table might need.

As I was revisiting my old candle pictures, the need to light a new one came about. I found out that a dear friend passed away early last month.

Dear Bob, if you are reading my blog from whichever dimension you’re in please know that you are loved and missed. Peace, light, and much love to your soul.

My thoughts and prayers also go to the victims of the Connecticut tragedy. So very sad.

  • 2 cups fresh cranberries
  • 2 cups Greek yogurt
  • 2 cups milk or half and half
  • 2 apples, cored, peeled, and chopped
  • ¼ cup orange or apple juice
  • 1 teaspoon pumpkin pie spice

Puree all the ingredients in a blender or food processor for 2 minutes or until very smooth. Pass the soup through a sieve a couple of times.

Refrigerate for a couple of hours before serving.
