Mashed Peas
I’d been contemplating what to do with the peas I had in the freezer for a while. There was the option of eating them with butter, salt and pepper as I normally do, or adding some chopped mint to make things more interesting. I liked the minted option but still wanted to do something different than the usual. The food processor, once again, offered a quick and easy solution.
This is seriously one of the easiest side dishes I’ve ever made. It’s literally ready in minutes. If you have leftovers, you can use them as a sandwich spread instead of mayonnaise or mustard. You can use fresh or frozen peas. The latter are convenient and work very well here, especially if you buy the kind that comes in a microwavable bag.
Minted Mashed Peas
4 small servings
20 mint leaves
2 tablespoons whipping cream
12 ounces frozen peas, cooked*
1/2 teaspoon onion powder (optional)
Sea salt and ground pepper, to taste
Process all the ingredients in a food processor into a smooth puree. If you don’t have a food processor, use a potato masher to mash the peas and finely mince the mint.
Serve warm or at room temperature with lamb, beef or chicken.
* You may boil, microwave or steam the peas. I microwaved them for 4 minutes.

what a fantastic idea…I bought so many peas at the farmer's market…I wish I had done this!!! Mine were not nearly as exciting.

I make these a lot, Nisrine. Mint and peas marry beautifully and mashed like this, so very British!
