We have been having some incredibly beautiful weather lately: Warm and sunny but not yet unbearably hot. I have been accordingly taking advantage of that by spending as much time as I can outdoors and by the pool. I hope the good weather lasts a while before our grueling Florida summer arrives.
In the kitchen arena, I have been feeling inspired. Inspired by chocolate, to be exact. I don’t know where my sudden obsession with chocolate is coming from but I’m just glad it’s here.
First, there was the chocolate pie I made for John’s birthday; then, today, there is this chocolate pudding:
The easiest and most nutritious I’ve ever had. It is so creamy and luscious it’s hard to believe the main ingredient is avocados. Try it for yourself and find out.
Avocado Chocolate Pudding Recipe
2 servings
Ingredients:
- 2 small ripe avocados, peeled and pitted
- 1/4 cup plus 1 tablespoon maple syrup
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons coconut milk or half and half
- 1 teaspoon vanilla extract
Directions:
Step 1: Process all of the ingredients in a food processor until creamy and shiny.
Step 2: Chill before serving. It tastes better after it’s been refrigerated a couple of hours.
