How much more predictable can I be? A few days after talking about the possibility of marinating brochettes in my Kalamata olive dressing, here I am with the recipe. As much as I’d like to think of myself as surprising, I find sometimes that my actions can be, well, too expectable.
I just couldn’t wait to make this recipe. I had the vinaigrette already in the refrigerator and that seemed like the easiest way to make delicious brochettes without any effort. Seriously, who wouldn’t? Seriously, they are as amazing as they are effortless.
Beef Brochettes in Kalamata Olive Marinade Recipe
4 servings
1 to 1 ¼ pounds top round or tenderloin, cut into 1-inch cubes
1/2 cup Kalmata olive vinaigrette
Place the meat cubes in a large bowl. Add the Kalamata olive vinaigrette. Cover with plastic wrap and refrigerate. Marinate for 2 to 4 hours (or overnight). Place the meat cubes onto skewers and grill on a preheated grill 3 to 5 minutes per side or until desired doneness is reached.
